Allergen Changeover Log

Prove the line was cleaned between products. Every changeover, verified and logged.

Why it matters

  • The allergen matrix says what is in a dish. This log proves you cleaned between dishes.
  • Inspectors ask for changeover records when allergens move across shared equipment.
  • A verified, dated entry is stronger than a verbal claim that the line was cleaned.

How to use it

Before switching products, open a new changeover and name the line or area.

Check every cleaning step. The entry stays incomplete until all six are done.

Full kitchen walkthrough is below the sheet.

Log every allergen changeover: line cleaned, allergens removed, ATP result, and who verified it.

Saved on this device only. ATP pass limit is 30 RLU or below. Incomplete entries are missing one or more cleaning steps.

How to use this in your kitchen
  1. 1When a run ends and the next product has a different allergen profile, tap Add changeover and pick your name from the team roster so the entry is stamped.
  2. 2Enter the line or area, the previous product, the next product, and check every allergen you are removing (milk, egg, peanut, tree nuts, soy, wheat, fish, shellfish, sesame).
  3. 3Work the cleaning steps in order: disassemble, wash, rinse, sanitize, air dry, then a visual inspection. Every box must be checked before the entry can be marked complete.
  4. 4If you swab, enter the ATP result. A fail means reclean and retest before the next product runs. No exceptions.
  5. 5Done is an entry marked complete with all steps checked, a passing ATP result, and your name stamped on it. That completed log is what an inspector asks for after an allergen complaint.
